Ingredients
- 1 cup noodles
- 2 ml water
- 1 pcs eggs
- 1 ml soy sauce
- 0.5 tsp chilli sauce
- 1 pcs tbls spring onions
- 0.5 g salt
- 0.5 g peppers
Instructions
- Put enough water in a saucepan to fully submerge the eggs and bring it to a vigorous boil.
- Carefully lower the eggs into the boiling water and set a timer for 6 1/2 to 7 minutes.
- While they cook, prepare a bowl of ice water big enough to hold the eggs.
- When the timer goes off, immediately move the eggs into the ice water and chill them for 3 to 5 minutes to halt further cooking.
- Remove the shells from the cooled eggs.
- Whisk together 2 tablespoons soy sauce, 2 tablespoons mirin, 1 teaspoon sugar, and 4 tablespoons water in a bowl to create the marinade.
- Put the peeled eggs into the marinade, cover the container, and chill in the refrigerator for a minimum of 4 hours or preferably overnight.
- Cut the marinated eggs in half and serve them so the soft yolks can ooze into the broth.
