  1. Slice the aubergines in half lengthwise.
  2. Position the aubergines on the cutting board with the cut sides facing down.
  3. Again, cut the aubergines in half lengthwise.
  4. Chop the aubergines into 1.5cm pieces.
  5. Trim the ends off the courgettes.
  6. Cut the courgettes into 1.5cm thick slices.
  7. Remove the skin from the peppers from top to bottom.
  8. Stand the peppers upright and slice around the stalk.
  9. Divide the peppers into three sections.
  10. Eliminate any membrane from the peppers.
  11. Dice the peppers into small chunks.
  12. Make a small cross incision on the bottom of each tomato.
  13. Transfer the tomatoes to a heatproof bowl.
  14. Pour boiling water over the tomatoes.
  15. Allow the tomatoes to sit in boiling water for 20 seconds.
  16. Take the tomatoes out of the boiling water.
  17. Discard the water.
  18. Submerge the tomatoes in cold water.
  19. Let the tomatoes cool down.
  20. Remove the skin from the tomatoes.
  21. Cut the tomatoes into quarters.
  22. Use a spoon to extract the seeds from the tomatoes.
  23. Coarsely chop the tomato flesh.
  24. Heat a sauté pan over medium heat.
  25. Once the pan is hot, add 2 tablespoons of olive oil.
  26. Sauté the aubergines for 5 minutes on each side until they are tender.
  27. Set the sautéed aubergines aside.
  28. In another tablespoon of oil, cook the courgettes for 5 minutes until they turn golden.
  29. Repeat the cooking process with the peppers.
  30. Be careful not to overcook the vegetables at this point.
  31. Tear the basil leaves and keep them aside.
  32. Cook the onion in the pan for 5 minutes.
  33. Add the garlic and continue frying for another minute.
  34. Mix in the vinegar and sugar.
  35. Incorporate the chopped tomatoes and half of the basil.
  36. Return the vegetables to the pan.
  37. Season with salt and pepper to your liking.
  38. Let it cook for 5 minutes.
  39. Garnish with the remaining basil before serving.
