Ratatouille
Ratatouille — a classic French dish that celebrates vibrant vegetables in a delightful vegetarian medley.

Ingredients
- 2 pcs aubergines
- 4 pcs courgettes
- 2 pcs yellow pepper
- 4 pcs tomato
- 5 g olive oil
- 1 g basil
- 1 g onions
- 3 pcs garlic cloves
- 1 ml red wine vinegar
- 1 g sugar
Instructions
- Slice the aubergines in half lengthwise.
- Position the aubergines on the cutting board with the cut sides facing down.
- Again, cut the aubergines in half lengthwise.
- Chop the aubergines into 1.5cm pieces.
- Trim the ends off the courgettes.
- Cut the courgettes into 1.5cm thick slices.
- Remove the skin from the peppers from top to bottom.
- Stand the peppers upright and slice around the stalk.
- Divide the peppers into three sections.
- Eliminate any membrane from the peppers.
- Dice the peppers into small chunks.
- Make a small cross incision on the bottom of each tomato.
- Transfer the tomatoes to a heatproof bowl.
- Pour boiling water over the tomatoes.
- Allow the tomatoes to sit in boiling water for 20 seconds.
- Take the tomatoes out of the boiling water.
- Discard the water.
- Submerge the tomatoes in cold water.
- Let the tomatoes cool down.
- Remove the skin from the tomatoes.
- Cut the tomatoes into quarters.
- Use a spoon to extract the seeds from the tomatoes.
- Coarsely chop the tomato flesh.
- Heat a sauté pan over medium heat.
- Once the pan is hot, add 2 tablespoons of olive oil.
- Sauté the aubergines for 5 minutes on each side until they are tender.
- Set the sautéed aubergines aside.
- In another tablespoon of oil, cook the courgettes for 5 minutes until they turn golden.
- Repeat the cooking process with the peppers.
- Be careful not to overcook the vegetables at this point.
- Tear the basil leaves and keep them aside.
- Cook the onion in the pan for 5 minutes.
- Add the garlic and continue frying for another minute.
- Mix in the vinegar and sugar.
- Incorporate the chopped tomatoes and half of the basil.
- Return the vegetables to the pan.
- Season with salt and pepper to your liking.
- Let it cook for 5 minutes.
- Garnish with the remaining basil before serving.
