Ham croquetas
Ham croquetas are a delightful Spanish dish made from tender pork.

Ingredients
- 75 g plain flour
- 2 pcs eggs
- 75 g breadcrumbs
- 1 pcs sunflower oil
- 4 tbsp olive oil
- 0.5 g leek
- 70 g jamón ibérico
- 60 g plain flour
- 75 ml vegetable stock
- 330 ml milk
- 1 tsp nutmeg
Instructions
- Begin by warming the olive oil in a skillet until it begins to glisten.
- Incorporate the leek and cook until tender without browning.
- Mix in the ham using a wooden spoon and sauté for one minute.
- Add the flour and cook over medium heat, stirring occasionally, until the blend is golden but not charred, which should take around 5 minutes.
- In a separate small saucepan, combine the stock and milk and heat until it is steaming but not boiling.
- Add a few grates of nutmeg to the liquid for seasoning.
- Slowly pour the liquid into the filling mixture, a few tablespoons at a time, while stirring continuously.
- Keep cooking the filling over medium heat for about 10 minutes or until it thickens and separates from the sides of the pan when stirred.
- Season the filling with black pepper and adjust the salt to taste if needed.
- Spread the mixture onto a 30 x 20cm baking tray and cover with cling film to prevent it from drying out.
- Allow the filling to cool, then refrigerate for 1 hour.
- Set up three bowls: one with flour, one with beaten egg, and the third with breadcrumbs.
- Remove the ham mixture from the refrigerator.
- Apply a little olive oil to your hands to facilitate rolling the croquetas.
- Shape a spoonful of the mixture into a ball the size of a walnut between your palms.
- Lightly coat the croquetas with flour.
- Dip the floured croquetas into the beaten egg.
- Cover the croquetas with breadcrumbs.
- Arrange the coated croquetas on a tray and chill in the refrigerator for 30 minutes.
- If using a deep-fryer, heat the oil to 180C; if not, warm oil in a deep, heavy saucepan until it shimmers.
- Carefully add 5-6 croquetas at a time to the hot oil and fry until they are golden brown on all sides.
- Once cooked, let the croquetas drain on kitchen paper and serve immediately.
