  1. Begin by warming the olive oil in a skillet until it begins to glisten.
  2. Incorporate the leek and cook until tender without browning.
  3. Mix in the ham using a wooden spoon and sauté for one minute.
  4. Add the flour and cook over medium heat, stirring occasionally, until the blend is golden but not charred, which should take around 5 minutes.
  5. In a separate small saucepan, combine the stock and milk and heat until it is steaming but not boiling.
  6. Add a few grates of nutmeg to the liquid for seasoning.
  7. Slowly pour the liquid into the filling mixture, a few tablespoons at a time, while stirring continuously.
  8. Keep cooking the filling over medium heat for about 10 minutes or until it thickens and separates from the sides of the pan when stirred.
  9. Season the filling with black pepper and adjust the salt to taste if needed.
  10. Spread the mixture onto a 30 x 20cm baking tray and cover with cling film to prevent it from drying out.
  11. Allow the filling to cool, then refrigerate for 1 hour.
  12. Set up three bowls: one with flour, one with beaten egg, and the third with breadcrumbs.
  13. Remove the ham mixture from the refrigerator.
  14. Apply a little olive oil to your hands to facilitate rolling the croquetas.
  15. Shape a spoonful of the mixture into a ball the size of a walnut between your palms.
  16. Lightly coat the croquetas with flour.
  17. Dip the floured croquetas into the beaten egg.
  18. Cover the croquetas with breadcrumbs.
  19. Arrange the coated croquetas on a tray and chill in the refrigerator for 30 minutes.
  20. If using a deep-fryer, heat the oil to 180C; if not, warm oil in a deep, heavy saucepan until it shimmers.
  21. Carefully add 5-6 croquetas at a time to the hot oil and fry until they are golden brown on all sides.
  22. Once cooked, let the croquetas drain on kitchen paper and serve immediately.
