  1. Prepare the sugar snap peas, ginger, and garlic.
  2. In a large bowl, combine all the marinade ingredients.
  3. Incorporate the shrimp into the marinade and mix well to coat.
  4. Allow the shrimp to marinate for 15 to 20 minutes.
  5. Preheat a wok or a large sauté pan on high heat for 1 minute.
  6. Pour the peanut oil into the pan and let it heat for approximately 30 seconds.
  7. Add the ginger and garlic to the pan and mix them together.
  8. Sauté the ginger and garlic for around 30 seconds.
  9. Introduce the marinated shrimp along with the marinade into the pan.
  10. Incorporate the snow peas, soy sauce, and chicken stock into the pan.
  11. Stir-fry until the shrimp becomes pink, which should take about 2 minutes.
  12. Add the scallions to the mixture in the pan.
  13. Continue to stir-fry for an additional minute.
  14. Switch off the heat and drizzle in the sesame oil.
  15. Mix everything together and serve alongside steamed rice.
