Ingredients
- 2 tbsp cornstarch
- 1 tsp sherry
- 0.5 tsp kosher salt
- 1 g shrimp
- 2 tbsp peanut oil
- 1 g ginger
- 3 pcs garlic
- 0.5 g snow peas
- 2 ml soy sauce
- 0.25 g chicken stock
- 4 pcs scallions
- 2 tsp sesame seed oil
Instructions
- Prepare the sugar snap peas, ginger, and garlic.
- In a large bowl, combine all the marinade ingredients.
- Incorporate the shrimp into the marinade and mix well to coat.
- Allow the shrimp to marinate for 15 to 20 minutes.
- Preheat a wok or a large sauté pan on high heat for 1 minute.
- Pour the peanut oil into the pan and let it heat for approximately 30 seconds.
- Add the ginger and garlic to the pan and mix them together.
- Sauté the ginger and garlic for around 30 seconds.
- Introduce the marinated shrimp along with the marinade into the pan.
- Incorporate the snow peas, soy sauce, and chicken stock into the pan.
- Stir-fry until the shrimp becomes pink, which should take about 2 minutes.
- Add the scallions to the mixture in the pan.
- Continue to stir-fry for an additional minute.
- Switch off the heat and drizzle in the sesame oil.
- Mix everything together and serve alongside steamed rice.
