Irenes Pink Rice

Ingredients
- 1 pcs red onion
- 2 tbsp olive oil
- 1 cup rice
- 2 cup fish stock
- 1 cup white wine
- 2 pcs haddock fillet
- 1 tbsp capers
- 1 pcs parsley
- 100 g spinach
- 100 g rocket
- 200 g iceberg lettuce
- 0.5 tsp salt
- 1 tsp black pepper
- 2 tbsp caesar salad dressing
- 2 tbsp thousand island dressing
Instructions
- Chop a red onion and fry in olive oil. Add rice to a pan. Add fish stock & cup of white wine.
- Place a haddock or cod fillet on a try and coat with olive oil, capers and parsley. Place under a grill for 5-10 minutes until browning on top.
- Create a green leafy salad by washing spinach, rocket and iceberg lettuce chopped into thin strips.
- Serve the pink rice first, add the fish on top. Season with salt and pepper. Add the salad on the side.. Use caesar salad dressing or thousand islands dressing to top it off.
