Fast Creme Brulee

  1. Preheat the oven to 160°C (320°F).
  2. In a small pan, heat 240 ml of cream and 120 ml of milk over medium heat until small bubbles form.
  3. In a large measuring cup, stir in 50 g of sugar. Whisk 4 egg yolks, then pour them into the cream mixture while stirring constantly. Add 1 teaspoon of vanilla extract.
  4. Remove the pan from heat and strain the cream mixture through a sieve into a large measuring cup.
  5. Lightly grease 4 (120 ml) ovenproof custard cups.
  6. Fill a 23 cm square pan with 3 cm of hot water and place it in the oven to add moisture.
  7. Place the custard cups in the oven and bake in the center for 20-25 minutes.
  8. Remove the cups from the oven and refrigerate overnight.
  9. Before serving, preheat the broiler/grill.
  10. Lightly sprinkle brown sugar on top of each custard cup and broil until the sugar melts.
  11. Serve immediately after broiling.
