  1. Preheat the oven to 200C/180C fan/gas mark 6.
  2. Place the baguettes on a baking tray and bake for 8-10 minutes.
  3. Allow the baguettes to cool down.
  4. In a pan, melt 2 teaspoons of butter and 1 teaspoon of oil over low heat.
  5. Sauté the chopped onion in the pan for 5 minutes until it becomes tender.
  6. Add the mushrooms to the pan.
  7. Increase the heat to medium.
  8. Cook the mushrooms for 5-10 minutes until they are soft and the liquid has evaporated.
  9. Incorporate the garlic and cook for an additional 1-2 minutes until softened.
  10. Add seasoning to the mixture.
  11. Mix in the mayonnaise and take the pan off the heat.
  12. Slice the baguettes in half lengthwise.
  13. Place the halved baguettes back on the baking tray with the cut sides facing up.
  14. Spread the mushroom mixture evenly over the baguettes.
  15. Top with cheddar, ham, kabanos, and mozzarella.
  16. Bake for 8-10 minutes until the cheese is melted and golden.
  17. In the meantime, heat the remaining butter and oil in another pan over medium heat.
  18. Fry the sliced onions for 5 minutes until they are golden and soft.
  19. Take the fried onions off the heat and set them aside.
  20. Once the pizzas are ready, add the caramelised onions on top.
  21. Finish with dill pickles (if desired), chives, and a drizzle of ketchup in a zig-zag pattern.
