Rock Cakes

Ingredients
- 225 g self-raising flour
- 75 g caster sugar
- 1 tsp baking powder
- 125 g butter
- 150 g fruit
- 1 pcs eggs
- 1 ml milk
- 2 ml vanilla extract
Instructions
- Start by heating the oven to 180C/350F/Gas 4.
- Prepare a baking tray by lining it with baking parchment.
- In a mixing bowl, combine the flour, sugar, and baking powder.
- Incorporate the cubed butter by rubbing it into the mixture until it resembles breadcrumbs.
- Fold in the dried fruit.
- In a separate bowl, whisk together the egg and milk along with the vanilla extract.
- Pour the egg mixture into the dry ingredients.
- Use a spoon to mix until the ingredients are just combined into a thick, lumpy dough.
- If necessary, add an extra teaspoon of milk to help the mixture hold together.
- Spoon portions of the mixture, about the size of golf balls, onto the lined baking tray.
- Ensure there is space between each spoonful as they will spread and flatten during baking.
- Bake in the oven for 15-20 minutes, or until they are golden-brown.
- Take them out of the oven and let them cool for a few minutes.
- Transfer the baked goods to a wire rack to cool completely.
