Ingredients
- 1 g olive oil
- 1 g chilli
- 2 tbsp thai red curry paste
- 1 g vegetable stock cube
- 400 ml coconut milk
- 2 ml fish sauce
- 100 g rice noodles
- 2 pcs juice
- 150 g king prawns
- 0.5 tsp coriander
Instructions
- In a medium saucepan, heat the oil.
- Incorporate the chilli into the saucepan.
- Sauté the chilli for 1 minute.
- Introduce the curry paste to the saucepan.
- Mix the curry paste and continue cooking for an additional minute.
- In a large jug, dissolve the stock cube in 700ml of boiling water.
- Add the prepared stock to the saucepan and stir well.
- Incorporate the coconut milk and bring the mixture to a boil.
- Stir in the fish sauce along with a pinch of seasoning.
- Add the noodles into the pan.
- Allow the noodles to cook for 3-4 minutes until they begin to soften.
- Squeeze the lime juice into the pan.
- Mix in the prawns to the saucepan.
- Cook the prawns until they are heated through, approximately 2-3 minutes.
- Garnish the dish with some coriander.
- Serve the dish in bowls.
- Finish with the remaining coriander and lime wedges for squeezing.
