  1. In a medium saucepan, heat the oil.
  2. Incorporate the chilli into the saucepan.
  3. Sauté the chilli for 1 minute.
  4. Introduce the curry paste to the saucepan.
  5. Mix the curry paste and continue cooking for an additional minute.
  6. In a large jug, dissolve the stock cube in 700ml of boiling water.
  7. Add the prepared stock to the saucepan and stir well.
  8. Incorporate the coconut milk and bring the mixture to a boil.
  9. Stir in the fish sauce along with a pinch of seasoning.
  10. Add the noodles into the pan.
  11. Allow the noodles to cook for 3-4 minutes until they begin to soften.
  12. Squeeze the lime juice into the pan.
  13. Mix in the prawns to the saucepan.
  14. Cook the prawns until they are heated through, approximately 2-3 minutes.
  15. Garnish the dish with some coriander.
  16. Serve the dish in bowls.
  17. Finish with the remaining coriander and lime wedges for squeezing.
