  1. Soak the beans in plenty of water overnight.
  2. Rinse and drain the beans.
  3. Put the beans in a pot and cover them with water.
  4. Heat the water until it reaches a boil.
  5. Lower the heat and let the beans simmer for about 50 minutes until they are slightly tender but not mushy.
  6. Drain the beans and set them aside.
  7. Preheat your oven to 180C/160C fan/gas 4.
  8. In a large frying pan, warm some olive oil.
  9. Add the onion and garlic to the heated pan.
  10. Sauté the onion and garlic on medium heat for 10 minutes until they are soft but not browned.
  11. Incorporate the tomato purée into the frying pan.
  12. Cook it for an additional minute.
  13. Stir in the other ingredients into the frying pan.
  14. Let the mixture simmer for 2-3 minutes.
  15. Season the mixture liberally.
  16. Fold in the drained beans.
  17. Transfer the mixture to a large ovenproof dish.
  18. Bake in the oven for about 1 hour, uncovered and without stirring, until the beans are tender.
  19. Let the dish cool down.
  20. Garnish with parsley and drizzle a bit more olive oil before serving.
