Gigantes Plaki

Ingredients
- 400 g butter beans
- 3 g olive oil
- 1 g onions
- 2 pcs garlic cloves
- 2 tbsp tomato puree
- 800 g tomatoes
- 1 g sugar
- 1 g oregano
- 1 g cinnamon
- 2 g parsley
Instructions
- Soak the beans in plenty of water overnight.
- Rinse and drain the beans.
- Put the beans in a pot and cover them with water.
- Heat the water until it reaches a boil.
- Lower the heat and let the beans simmer for about 50 minutes until they are slightly tender but not mushy.
- Drain the beans and set them aside.
- Preheat your oven to 180C/160C fan/gas 4.
- In a large frying pan, warm some olive oil.
- Add the onion and garlic to the heated pan.
- Sauté the onion and garlic on medium heat for 10 minutes until they are soft but not browned.
- Incorporate the tomato purée into the frying pan.
- Cook it for an additional minute.
- Stir in the other ingredients into the frying pan.
- Let the mixture simmer for 2-3 minutes.
- Season the mixture liberally.
- Fold in the drained beans.
- Transfer the mixture to a large ovenproof dish.
- Bake in the oven for about 1 hour, uncovered and without stirring, until the beans are tender.
- Let the dish cool down.
- Garnish with parsley and drizzle a bit more olive oil before serving.
