Ham hock colcannon
Ham hock colcannon is a traditional Irish dish that highlights the rich flavors of pork.

Ingredients
- 800 g potatoes
- 50 g butter
- 3 pcs garlic cloves
- 1 pcs cabbage
- 8 g spring onion
- 100 ml double cream
- 2 tsp mustard
- 180 g ham
- 4 pcs eggs
Instructions
- Remove the skin from the potatoes and chop them into uniform, medium-sized pieces.
- Place the potato pieces into a large pot filled with cold water and add salt.
- Heat the water until it reaches a boil.
- Allow the potatoes to cook for 10 to 15 minutes, or until a knife can be easily inserted.
- In a large sauté pan, melt the butter over medium heat.
- Incorporate the garlic, cabbage, spring onions, and some seasoning into the sauté pan.
- Occasionally stir the mixture until the cabbage has softened but still has a slight crunch.
- Set the sautéed cabbage mixture aside for later use.
- Drain the cooked potatoes and let them sit to steam off excess moisture for a few minutes.
- In the same saucepan, mash the potatoes together with the cream, mustard, and seasoning.
- Fold the sautéed cabbage and ham hock into the mashed potato mixture.
- Keep the potato mixture warm on low heat.
- Without cleaning it, reheat the sauté pan that was used for the cabbage.
- Pour a bit of oil into the warmed pan.
- Break the eggs into the pan and fry them to your preferred doneness.
- Spoon the colcannon into serving bowls.
- Garnish each bowl of colcannon with a fried egg on top.
