  1. Place the ginger, garlic, lemongrass, coriander, and one chilli into a food processor.
  2. Blend the contents in the food processor until they form a smooth purée.
  3. Warm oil in a saucepan over a low flame.
  4. Incorporate the purée into the pan and cook for 5 minutes.
  5. Mix in the beef, soy sauce, five-spice, sugar, and stock.
  6. Cover the pan with a lid and allow the mixture to reach a boil.
  7. Reduce the heat and let it simmer for 1 hour and 15 minutes.
  8. Take off the lid and continue cooking for another 15 minutes until the beef becomes tender.
  9. Right before serving, cook the noodles following the instructions on the package.
  10. Thoroughly drain the noodles.
  11. Distribute the noodles into two bowls.
  12. Ladle the beef stew over the noodles.
  13. Garnish with the remaining chilli and coriander leaves.
  14. Add lime wedges for squeezing over the meal.
