Lemongrass beef stew with noodles

Ingredients
- 1 g ginger
- 2 pcs garlic cloves
- 3 g lemongrass
- 2 g coriander leaves
- 2 g chilli
- 2 tbsp vegetable oil
- 250 g beef
- 2 ml soy sauce
- 1 tsp five spice powder
- 1 g brown sugar
- 400 cup beef stock
- 100 g rice noodles
- 1 pcs lime
Instructions
- Place the ginger, garlic, lemongrass, coriander, and one chilli into a food processor.
- Blend the contents in the food processor until they form a smooth purée.
- Warm oil in a saucepan over a low flame.
- Incorporate the purée into the pan and cook for 5 minutes.
- Mix in the beef, soy sauce, five-spice, sugar, and stock.
- Cover the pan with a lid and allow the mixture to reach a boil.
- Reduce the heat and let it simmer for 1 hour and 15 minutes.
- Take off the lid and continue cooking for another 15 minutes until the beef becomes tender.
- Right before serving, cook the noodles following the instructions on the package.
- Thoroughly drain the noodles.
- Distribute the noodles into two bowls.
- Ladle the beef stew over the noodles.
- Garnish with the remaining chilli and coriander leaves.
- Add lime wedges for squeezing over the meal.
