  1. Preheat the oven to 160C/140C fan/gas mark 3.
  2. Prepare a deep 20cm cake tin by greasing it and lining the bottom and sides with baking parchment.
  3. In a medium saucepan, combine honey, sugar, and butter.
  4. Heat the mixture over medium heat until everything is completely melted.
  5. Take the saucepan off the heat and let the mixture cool down.
  6. In a large mixing bowl, add the flour and spices.
  7. Blend the flour and spices together.
  8. Once the liquid has cooled, incorporate the eggs using a whisk.
  9. Pour the liquid mixture into the bowl with the dry ingredients.
  10. Stir the mixture until it becomes a smooth batter, taking care not to overmix.
  11. Transfer the batter into the prepared cake tin.
  12. Bake for 50-55 minutes, or until the cake has risen and a skewer inserted into the center comes out clean.
  13. Let the cake cool in the tin for 20 minutes.
  14. Invert the cake onto a wire rack to cool completely.
  15. After it has cooled, use a large serrated knife to cut the cake into three layers.
  16. Spread jam on the two bottom layers of the cake.
  17. Reassemble the cake and set it aside.
  18. In a medium pan, combine cream, chocolate, and honey.
  19. Cook on low to medium heat until the chocolate melts and the mixture is smooth.
  20. Place the cake on a wire rack over a baking tray lined with parchment.
  21. Pour the chocolate glaze over the cake, making sure it is entirely covered.
  22. Carefully use a fish slice to move the cake onto a serving plate.
  23. Let the glaze set.
  24. If desired, sprinkle edible gold powder over the cake for decoration.
  25. Store the uniced cake for up to 5 days or the iced cake in the refrigerator for up to 3 days.
  26. Take the iced cake out of the fridge prior to serving and enjoy at room temperature.
