Piernik (Polish gingerbread)

Ingredients
- 140 g butter
- 300 ml honey
- 100 g brown sugar
- 375 g self-raising flour
- 3 g ginger
- 1 tsp cinnamon
- 0.5 tsp cloves
- 0.25 tsp nutmeg
- 0.25 g peppers
- 3 pcs eggs
- 200 g plum jam
- 225 ml double cream
- 140 pcs dark chocolate
- 3 ml honey
Instructions
- Preheat the oven to 160C/140C fan/gas mark 3.
- Prepare a deep 20cm cake tin by greasing it and lining the bottom and sides with baking parchment.
- In a medium saucepan, combine honey, sugar, and butter.
- Heat the mixture over medium heat until everything is completely melted.
- Take the saucepan off the heat and let the mixture cool down.
- In a large mixing bowl, add the flour and spices.
- Blend the flour and spices together.
- Once the liquid has cooled, incorporate the eggs using a whisk.
- Pour the liquid mixture into the bowl with the dry ingredients.
- Stir the mixture until it becomes a smooth batter, taking care not to overmix.
- Transfer the batter into the prepared cake tin.
- Bake for 50-55 minutes, or until the cake has risen and a skewer inserted into the center comes out clean.
- Let the cake cool in the tin for 20 minutes.
- Invert the cake onto a wire rack to cool completely.
- After it has cooled, use a large serrated knife to cut the cake into three layers.
- Spread jam on the two bottom layers of the cake.
- Reassemble the cake and set it aside.
- In a medium pan, combine cream, chocolate, and honey.
- Cook on low to medium heat until the chocolate melts and the mixture is smooth.
- Place the cake on a wire rack over a baking tray lined with parchment.
- Pour the chocolate glaze over the cake, making sure it is entirely covered.
- Carefully use a fish slice to move the cake onto a serving plate.
- Let the glaze set.
- If desired, sprinkle edible gold powder over the cake for decoration.
- Store the uniced cake for up to 5 days or the iced cake in the refrigerator for up to 3 days.
- Take the iced cake out of the fridge prior to serving and enjoy at room temperature.
