  1. Set the oven temperature to 450 degrees.
  2. Rinse and dry all vegetables and fruits.
  3. Slice the sweet potatoes into wedges that are ½-inch thick.
  4. On a baking sheet, coat the sweet potato wedges with a small amount of oil, salt, and pepper.
  5. Bake the sweet potatoes until they are brown and tender, which should take about 20 to 25 minutes.
  6. Cut the onion in half and remove the skin.
  7. Thinly slice the onion until you have about ¼ cup (use ½ cup for 4 servings).
  8. Chop the remaining part of the onion finely.
  9. Peel and finely chop the garlic.
  10. Cut the lime in half and squeeze the juice into a small bowl.
  11. Slice the buns in half.
  12. Place 1 tablespoon of butter (or 2 tablespoons for 4 servings) into a small bowl that can go in the microwave.
  13. Heat the butter in the microwave until it melts, which should take around 30 seconds.
  14. Using a brush, apply the melted butter to the cut sides of the buns.
  15. In the bowl with the lime juice, mix in the sliced onion, ¼ teaspoon of sugar (or ½ teaspoon for 4 servings), and a small pinch of salt.

  17. In a large skillet, heat a small amount of oil over medium-high heat.
  18. Add the chopped onion to the skillet, seasoning it with salt and pepper.
  19. Sauté the onion, stirring occasionally, until it becomes soft, which will take about 4 to 5 minutes.
  20. Incorporate the garlic into the skillet and cook until it becomes aromatic, about 30 seconds.
  21. Introduce the pork to the skillet and season it with salt and pepper.
  22. Cook the pork, breaking it apart into smaller pieces, until it is browned and fully cooked, which should take about 4 to 6 minutes.
  23. While the pork is cooking, mix together BBQ sauce, the pickling liquid from the onion, 3 tablespoons of ketchup (or 6 tablespoons for 4 servings), ½ teaspoon of sugar (or 1 teaspoon for 4), and ¼ cup of water (or ⅓ cup for 4) in another small bowl.
  24. After the pork is thoroughly cooked, pour the BBQ sauce mixture into the skillet.
  25. Stir the mixture and cook until the sauce thickens, which should take around 2 to 3 minutes.
  26. Taste the sauce and adjust seasoning with salt and pepper as needed.
  27. At the same time, toast the buns in the oven or toaster oven until they turn golden brown, about 3 to 5 minutes.
  28. Place the toasted buns on plates and fill them with the BBQ pork.
  29. Add the pickled onion and hot sauce on top of the BBQ pork.
  30. Serve the sweet potato wedges alongside.
