Ingredients
- 1 pcs eggs
- 1 g butter
- 1 g sugar
- 0.5 cup molasses
- 1 tsp vanilla
- 2 tsp baking powder
- 3 ml water
- 2 tsp baking powder
- 1 g cinnamon
- 2 g salt
- 4 g flour
- 2 pcs jam
Instructions
- Heat the oven to 350 °F (180 °C) and line a large baking sheet with parchment paper.
- Put the butter, white sugar, and egg in the bowl of a stand mixer fitted with the paddle attachment and beat until creamy and combined.
- Add the molasses and vanilla extract to the mixer and blend until smooth.
- Pour in the baking soda dissolved in water and mix for another minute to incorporate.
- In a separate bowl, sift together the baking powder, cinnamon, flour, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until fully combined and scraping down the sides as needed so the dough holds its shape.
- Scoop the dough with a small spoon, roll each portion into a ball, and place the balls on the prepared baking sheet.
- Press each dough ball into a flat disc using a lightly floured glass or your slightly moistened palm.
- Bake the cookies on the parchment-lined sheet for 10–12 minutes.
- Remove the cookies from the oven and let them cool on the baking sheet for at least 10 minutes.
- Once cooled, assemble sandwiches by spreading at least two teaspoons of your favorite jam on one cookie and topping with another; repeat with the remaining cookies and serve.
