  1. Begin by peeling and finely grating the potatoes.
  2. Take a clean kitchen towel and wring out as much liquid as you can from the grated potatoes.
  3. In a large bowl, mix together the grated potatoes, diced onion, minced garlic, eggs, flour, marjoram, salt, and black pepper.
  4. Blend the ingredients thoroughly until a thick and smooth batter is achieved.
  5. In a sizable frying pan, warm a good amount of oil over medium heat.
  6. Make sure the oil is hot but not reaching the smoking point.
  7. Scoop portions of the batter into the pan, pressing each one down to form a thin pancake.
  8. Cook the pancakes until they are golden brown and crispy on one side.
  9. Carefully flip the pancakes and continue cooking the other side until it is also golden and crispy.
  10. Once cooked, place the pancakes on a plate lined with paper towels to absorb any extra oil.
  11. Serve the pancakes right away while they are hot, accompanied by sour cream, garlic dip, or as a side dish.
