  1. Rinse and soak toor dal in approximately 3 cups of water for a minimum of one hour.
  2. Discard the soaking water from the dal.
  3. Boil the drained dal with 2-1/2 cups of water.
  4. Incorporate salt and turmeric into the cooking dal.
  5. Simmer on medium-high heat until the dal becomes tender, which should take about 30 minutes.
  6. Check that the dal has a thick, soup-like texture.
  7. In a skillet, melt ghee over heat.
  8. Introduce cumin seeds and mustard seeds into the heated ghee.
  9. Allow the seeds to pop.
  10. Add bay leaves, green chili, ginger, and chili powder to the skillet.
  11. Mix the ingredients for a few seconds.
  12. Incorporate tomatoes, salt, and sugar into the skillet.
  13. Stir and cook until the tomatoes become soft and mushy.
  14. Mix in cilantro and garam masala with the tomato mixture.
  15. Cook for an additional minute.
  16. Drizzle the seasoning over the cooked dal and combine thoroughly.
  17. Let the dal simmer with the seasoning for another minute.
  18. Serve the dal alongside naan.
