Ingredients
- 800 g cooking apples
- 0.25 ml water
- 1 tsp vanilla powder
- 1 tbsp lemon juice
- 4 g sugar
- 50 g butter
- 100 g breadcrumbs
- 50 g sugar
- 0.75 ml double cream
Instructions
- Peel the apples, remove and discard the cores, then cut the fruit into small cubes.
- Place the apple cubes in a saucepan and pour in the water, vanilla, and lemon juice.
- Bring the mixture to a boil, then put the lid on and lower the heat to medium-low.
- Once the apples start to release their liquid, sweeten with sugar to your preference.
- Simmer the apples for about 15 minutes until they break down into a chunky applesauce, or cook longer if you want it smoother.
- Place the applesauce in the refrigerator and chill until cold.
- Melt the butter in a skillet, watching carefully so it doesn’t brown.
- Add the breadcrumbs and sugar to the melted butter and mix until evenly coated.
- Over low heat, toast the breadcrumb mixture, stirring constantly, until it turns a light golden color.
- Remove the toasted breadcrumbs from the pan and spread them out on a sheet of baking paper to cool.
- Lightly whip the double cream until it reaches soft peaks.
- Just before serving, build the trifle in individual glasses or a large bowl: start with a layer of breadcrumbs, spoon over chilled applesauce, add more breadcrumbs, and repeat the layers as desired.
- Finish with a generous dollop of whipped cream on top and serve immediately.
