Salmon Poke bowl

  1. Peel and mash 2 avocados. Add a tablespoon of cream, 1 tsp of lemon juice and a pinch of salt and pepper
  2. Poach 4 eggs by cracking open the eggs in boiling water. Turn temperature down so it stops bubbling but remains hot. Boil for 3-5 mins
  3. Add freshly washed spinach leaves into a bowl. Add eggs into bowl. Sprinkle with freshly chopped chillis. Add slices of smoked salmon to top and sprinkle with pepper to serve with avocado
