- 568 ml double cream
- 100 cup white chocolate chips
- 1 tsp vanilla
- 6 pcs egg yolks
- 2 g caster sugar
- 1 g caster sugar
Instructions
- In a saucepan, warm the cream, chocolate, and vanilla pod until the chocolate is fully melted.
- Remove from heat and let it steep for 10 minutes, making sure to scrape the seeds from the pod into the cream.
- If you're using vanilla extract, add it immediately.
- Preheat the oven to 160C/fan 140C/gas mark 3.
- Whisk the egg yolks and sugar together until they turn a light color.
- Incorporate the chocolate cream into the egg mixture.
- Pass the mixture through a sieve into a jug.
- Distribute the mixture evenly into ramekins.
- Arrange the ramekins in a deep roasting pan.
- Fill the roasting pan with boiling water, ensuring it reaches halfway up the sides of the ramekins.
- Bake for 15-20 minutes, or until the center is slightly wobbly but set.
- Refrigerate the ramekins for a minimum of 4 hours to chill.
- When ready to serve, sprinkle some sugar over the tops of the brûlées.
- Use a blowtorch or place them briefly under a hot grill to caramelize the sugar.
- Allow the caramel to set before serving.
