  1. In a saucepan, warm the cream, chocolate, and vanilla pod until the chocolate is fully melted.
  2. Remove from heat and let it steep for 10 minutes, making sure to scrape the seeds from the pod into the cream.
  3. If you're using vanilla extract, add it immediately.
  4. Preheat the oven to 160C/fan 140C/gas mark 3.
  5. Whisk the egg yolks and sugar together until they turn a light color.
  6. Incorporate the chocolate cream into the egg mixture.
  7. Pass the mixture through a sieve into a jug.
  8. Distribute the mixture evenly into ramekins.
  9. Arrange the ramekins in a deep roasting pan.
  10. Fill the roasting pan with boiling water, ensuring it reaches halfway up the sides of the ramekins.
  11. Bake for 15-20 minutes, or until the center is slightly wobbly but set.
  12. Refrigerate the ramekins for a minimum of 4 hours to chill.
  13. When ready to serve, sprinkle some sugar over the tops of the brûlées.
  14. Use a blowtorch or place them briefly under a hot grill to caramelize the sugar.
  15. Allow the caramel to set before serving.
