  1. Massage the garlic onto the surface of the steaks.
  2. Put the steaks inside a resealable sandwich bag.
  3. In the bag, include the olive oil, sherry vinegar, and parsley stems.
  4. Mix everything thoroughly within the bag.
  5. Gently pound the steaks a few times using a rolling pin.
  6. Allow the steaks to marinate for 1 to 2 hours.
  7. Combine all the sauce ingredients in a blender.
  8. In the blender, add a tablespoon of water.
  9. Blend the sauce until it reaches a smooth consistency.
  10. Preheat a griddle or frying pan over high heat.
  11. Remove the garlic and parsley stems from the steaks.
  12. Generously season the steaks.
  13. Cook the steaks for 2 minutes per side.
  14. Transfer the cooked steaks to a plate to rest.
  15. Arrange the ciabatta halves on the plate with the toasted side facing down.
  16. Cut the steaks into slices.
  17. Fill the rolls with the sliced steaks, green sauce, and arugula.
