Miso Beans
A quick, comforting Japanese-inspired side dish of simmered beans in a miso-glaze. Great as a savory bite or with steamed rice.

Ingredients
- 400 g white beans (cooked)
- 2 pcs garlic
- 10 g ginger
- 2 g miso paste
- 250 ml water or vegetable stock
- 1 ml mirin
- 1 ml soy sauce
Instructions
- Rinse and drain the white beans. In a small pot, heat a splash of oil and sauté garlic and ginger until fragrant, about 1 minute.
- Add the beans, water or vegetable stock, and a tablespoon of miso paste. Bring to a simmer and cook for 8–10 minutes until beans are tender and flavors meld.
- Stir in a touch of mirin or honey for sweetness, and adjust salt with soy sauce if needed. Simmer for another 2–3 minutes.
- Taste and balance with a splash of rice vinegar if desired. Serve warm, garnished with sliced green onions or sesame seeds.
