Ingredients
- 2 cup all purpose flour
- 0.5 g brown sugar
- 2 tsp baking powder
- 1 g ginger
- 1 tsp allspice
- 1 g cinnamon
- 1 cup raisins
- 0.3333333333333333 g butter
- 0.5 cup molasses
- 1 ml water
Instructions
- Combine the flour, brown sugar, baking powder, and spices in a medium bowl and whisk together until evenly mixed.
- Stir in the raisins, tossing them well so they become coated with the flour mixture.
- Add the melted butter, molasses, and water, then mix with a wooden spoon until the ingredients are incorporated.
- Using the spoon or your hands, shape the mixture into a single ball.
- Place the dough ball into a cotton pudding bag and tie it, leaving at least 1 inch (2.5 cm) of space for the pudding to expand.
- Lower the tied bag into a pot of boiling water and boil the pudding for 1.5 hours (it can be boiled alongside other items such as Jiggs Dinner).
- When the duff is firm, remove the bag from the water and let it cool briefly before untying and taking the pudding out of the bag.
- Slice the pudding like a cake and serve with a warm sauce of your choice, such as rum butter, warmed molasses, or Molasses Coady sauce (1 cup/250 mL molasses, 1/4 cup/60 mL butter, 1/4 cup/60 mL water).
