  1. Set the oven temperature to 350°.
  2. Take the stems off one bunch of Tuscan kale.
  3. Break the kale leaves into pieces that are about 1 inch in size.
  4. Chop half a head of green cabbage into coarse pieces.
  5. Mix the kale and cabbage together in a large baking dish.
  6. Add 4 cloves of garlic, sliced thinly, to the mixture of greens.
  7. If desired, slice some onions and shiitake mushrooms.
  8. In a cast iron baking dish on the stove, sauté the onions and mushrooms.
  9. Combine the sautéed onions and mushrooms with the greens.
  10. Drizzle some olive oil over the greens to coat them.
  11. Pour ½ cup of chicken stock or broth over the greens.
  12. Cover the baking dish with aluminum foil.
  13. Bake the covered dish until the greens are wilted, which will take about 15 minutes.
  14. Take off the foil from the dish.
  15. Add salt and pepper to the greens for seasoning.
  16. Continue baking until the cabbage becomes tender, around 20 to 25 minutes more.
  17. While that bakes, heat a bit of olive oil in a large skillet over medium-high heat.
  18. Use a fork to prick four sweet Italian sausages.
  19. Cook the sausages in the skillet, turning occasionally, until they are browned all over and fully cooked, about 10 to 12 minutes.
  20. Once the greens are ready, slice the cooked sausage.
  21. Mix the sliced sausage into the greens along with a splash of your preferred vinegar.
