Crispy Sausages and Greens
Crispy Sausages with Greens — a delightful Irish pork dish.

Ingredients
- 1 bunch kale
- 8 pcs italian fennel sausages
- 1 pcs head chopped cabbage
- 8 pcs garlic cloves
- 1 g onions
- 1 pcs shiitake mushrooms
- 1 g chicken stock
- 1 g salt
- 1 g peppers
Instructions
- Set the oven temperature to 350°.
- Take the stems off one bunch of Tuscan kale.
- Break the kale leaves into pieces that are about 1 inch in size.
- Chop half a head of green cabbage into coarse pieces.
- Mix the kale and cabbage together in a large baking dish.
- Add 4 cloves of garlic, sliced thinly, to the mixture of greens.
- If desired, slice some onions and shiitake mushrooms.
- In a cast iron baking dish on the stove, sauté the onions and mushrooms.
- Combine the sautéed onions and mushrooms with the greens.
- Drizzle some olive oil over the greens to coat them.
- Pour ½ cup of chicken stock or broth over the greens.
- Cover the baking dish with aluminum foil.
- Bake the covered dish until the greens are wilted, which will take about 15 minutes.
- Take off the foil from the dish.
- Add salt and pepper to the greens for seasoning.
- Continue baking until the cabbage becomes tender, around 20 to 25 minutes more.
- While that bakes, heat a bit of olive oil in a large skillet over medium-high heat.
- Use a fork to prick four sweet Italian sausages.
- Cook the sausages in the skillet, turning occasionally, until they are browned all over and fully cooked, about 10 to 12 minutes.
- Once the greens are ready, slice the cooked sausage.
- Mix the sliced sausage into the greens along with a splash of your preferred vinegar.
