Home-made Mandazi
Homemade Mandazi — a delightful Kenyan breakfast treat.

Ingredients
- 750 g self-raising flour
- 6 g sugar
- 2 pcs eggs
- 1 ml milk
Instructions
- Combine the flour, cinnamon, and sugar in an appropriate bowl.
- In another bowl, blend the egg with the milk using a whisk.
- Create a well in the center of the flour mixture and pour in the egg and milk blend.
- Gradually combine the ingredients to create a dough.
- Knead the dough for 3-4 minutes until it no longer adheres to the bowl and has a smooth texture.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- Roll out the dough on a lightly floured surface to a thickness of 1cm.
- With a sharp knife, cut the rolled dough into your preferred sizes.
- Place the cut pieces of dough aside in preparation for deep frying.
- Heat oil in an appropriate pot.
- Carefully immerse the mandazi pieces into the hot oil.
- Fry until the first side turns a light brown, then flip to cook the other side.
- Enjoy the mandazis either warm or cold.
