  1. Slice the squid into rings approximately ½cm thick.
  2. Pour the flour into a freezer bag and season it generously.
  3. Incorporate the capers into the flour within the bag.
  4. Shake the bag to combine the flour and capers thoroughly.
  5. Add the squid rings to the bag.
  6. Shake the bag once more until all the squid rings are evenly coated.
  7. Combine the garlic with the mayonnaise.
  8. Transfer the garlic mayonnaise into a serving dish.
  9. Fill a large pan with oil, ensuring it reaches about 7cm up the sides.
  10. Make sure the oil does not fill the pan more than a third of the way.
  11. Heat the pan over medium heat, allowing the oil to warm.
  12. To check if the oil is ready, drop in a small piece of bread; it should sizzle.
  13. Take a handful of squid from the flour and shake off any extra.
  14. Carefully place the squid into the hot oil.
  15. Fry the squid for roughly 3 minutes until it becomes crispy.
  16. Using a slotted spoon, take out the cooked squid and set it on kitchen paper.
  17. Continue the frying process with the remaining squid.
  18. Serve the squid immediately alongside the garlic mayonnaise and lemon wedges.
