Fried calamari

Ingredients
- 300 g squid
- 200 g plain flour
- 2 tbsp capers
- 1 pcs garlic
- 5 g mayonnaise
- 1 tbsp vegetable oil
- 1 pcs lemon
Instructions
- Slice the squid into rings approximately ½cm thick.
- Pour the flour into a freezer bag and season it generously.
- Incorporate the capers into the flour within the bag.
- Shake the bag to combine the flour and capers thoroughly.
- Add the squid rings to the bag.
- Shake the bag once more until all the squid rings are evenly coated.
- Combine the garlic with the mayonnaise.
- Transfer the garlic mayonnaise into a serving dish.
- Fill a large pan with oil, ensuring it reaches about 7cm up the sides.
- Make sure the oil does not fill the pan more than a third of the way.
- Heat the pan over medium heat, allowing the oil to warm.
- To check if the oil is ready, drop in a small piece of bread; it should sizzle.
- Take a handful of squid from the flour and shake off any extra.
- Carefully place the squid into the hot oil.
- Fry the squid for roughly 3 minutes until it becomes crispy.
- Using a slotted spoon, take out the cooked squid and set it on kitchen paper.
- Continue the frying process with the remaining squid.
- Serve the squid immediately alongside the garlic mayonnaise and lemon wedges.
