Ingredients
- 100 g rice noodles
- 3 pcs thinly spring onions
- 50 g petit pois
- 85 g chilli
- 85 tsp coriander
- 85 pcs lime
- 300 g salmon
Instructions
- Set the oven to preheat at 200°C (180°C fan/gas 6).
- Place the noodles in a bowl and pour over just enough boiling water to cover them.
- Allow the noodles to sit for 2 minutes until they are flexible but not completely soft, then drain thoroughly.
- Return the drained noodles to the bowl and combine with the spring onions, petit pois, salt, pepper and one-third of the butter.
- Stir everything together until the butter melts and the ingredients are well incorporated.
- Spread out two large squares of baking parchment on your work surface.
- Spoon the noodle and vegetable mixture into the centre of each square, dividing it between the two.
- Place a salmon fillet on top of the noodles in the centre of each paper square.
- Cut the remaining butter into slices and arrange the pieces evenly over each salmon fillet.
- Fold the sides of the paper up over the fish, press the edges together and tuck the ends underneath so the parcels are sealed with no gaps.
- Put the parcels on a baking sheet and bake in the preheated oven for 15-20 minutes, then transfer to plates and serve immediately.
