Ingredients
- 1.5 g chicken breasts
- 0.75 g plain flour
- 1 pcs eggs
- 2 tbsp starch
- 1 tsp baking powder
- 1 g salt
- 0.5 tsp onion salt
- 0.25 tsp garlic powder
- 0.75 ml water
- 0.5 g chicken stock
- 0.25 cup duck sauce
- 3 ml soy sauce
- 2 ml honey
- 1 tbsp rice vinegar
- 2 tsp sesame seed oil
- 0.5 tbsp gochujang
- 2 tbsp starch
- 1 pcs garlic
- 2 g spring onion
- 1 g ginger
Instructions
- Combine 2 cups water, 2 tablespoons soy sauce, 2 tablespoons white vinegar, sherry cooking wine, 1/4 teaspoon white pepper, minced ginger, minced garlic, hot pepper, ketchup, hoisin sauce, and sugar in a bowl, stir until blended, then set aside.
- Place the chicken in another bowl, season with a pinch of salt and a pinch of white pepper, add 2 egg whites and 3 tablespoons cornstarch, and toss to coat.
- Heat oil in a deep fryer or a large pot to 350°F (175°C).
- Working in batches, deep-fry the coated chicken for 3–4 minutes or until golden brown, separating pieces as needed so they don't stick; remove to paper towels to drain and set aside.
- Pour the prepared sauce into a wok or large skillet, add the broccoli, and bring the mixture to a boil.
- Whisk 2 tablespoons cornstarch with 4 tablespoons water in a small bowl to form a slurry.
- Gradually stir the slurry into the boiling sauce, stirring until it thickens to your liking.
- Return the fried chicken to the wok and stir-fry for about 1 minute, until it's heated through and well coated with the sauce.
- Transfer the stir-fry to a serving plate and serve right away.
