Steamed Chicken

  1. Wash a whole corn-fed free-range chicken under running water.
  2. Place the chicken in a steamer and steam for 45 minutes.
  3. While the chicken is steaming, peel and finely chop 30g of ginger and wash and chop spring onions.
  4. In a small pan, heat 50ml of olive oil until it reaches smoking temperature, then turn off the heat.
  5. Add the chopped ginger and spring onions to the pan along with a pinch of salt.
  6. Once the chicken is cooked, chop it into chunks using a cleaver.
  7. Serve the chicken cold with the ginger sauce on the side for dipping.
