Ingredients
- 1 pcs chicken
- 2 quart neutral frying oil
- 1 pcs egg white
- 1.5 g flour
- 1 g brown sugar
- 1 g salt
- 1 tbsp paprika
- 2 tsp onion salt
- 1 tsp chili powder
- 1 g black pepper
- 0.5 tsp celery salt
- 0.5 pcs sage
- 0.5 tsp garlic powder
- 0.5 tsp allspice
- 0.5 g oregano
- 0.5 g basil
- 0.5 tsp marjoram
Instructions
- Preheat the fryer to 350°F.
- Thoroughly combine all the spices for the spice mix.
- Stir the spice mix into the flour along with the brown sugar and salt.
- Lightly coat each piece of chicken in egg white, then place it in the flour mixture and turn several times until the flour sticks; repeat with all pieces.
- Allow the coated chicken to rest for 5 minutes so the crust can set and dry slightly.
- Fry the chicken in batches in the preheated fryer — cook breasts and wings 12–14 minutes and legs and thighs a few minutes longer, or until an instant-read thermometer inserted into the thickest part reads 165°F.
- Remove the chicken from the fryer and let it drain on a few layers of paper towels.
- Serve the chicken hot.
