  1. In a medium-sized bowl, combine the egg yolks, cream cheese, and baking powder with a hand mixer.
  2. Gradually incorporate the flour into the mixture.
  3. When the mixture resembles coarse wood shavings and is difficult to blend, cease using the mixer.
  4. Knead the dough with your hands.
  5. Form the dough into a roll.
  6. Wrap the roll in aluminum foil.
  7. Place the roll in the freezer for 15 minutes.
  8. Preheat your oven to 375°F.
  9. Remove the dough from the freezer.
  10. Divide the dough into two equal sections.
  11. Roll out each section and cut them into 3-inch triangles.
  12. Add a small spoonful of jam to the center of each triangle.
  13. Shape each triangle into a croissant by rolling it up.
  14. Arrange the croissants on a greased baking sheet.
  15. Bake the croissants for 10-12 minutes or until they turn golden brown.
  16. Repeat the procedure with the remaining dough.
  17. Once baked, remove the croissants from the oven.
  18. Set the croissants aside and dust them with powdered sugar on top.
  19. This recipe yields approximately 3 batches of 20 cookies each.
