Vanilla alfajores

Ingredients
- 150 g dulce de leche
- 50 g coconut flakes
- 100 g butter
- 100 g sugar
- 1 pcs eggs
- 1 pcs egg yolks
- 200 tbsp cornstarch
- 100 cup all purpose flour
- 1 tsp baking powder
- 1 ml vanilla extract
- 150 g dulce de leche
- 50 g coconut flakes
Instructions
- Begin by beating the softened butter for approximately one minute.
- Introduce the sugar and continue to cream the mixture for an additional two minutes.
- Add the egg and ensure it is fully combined.
- Stir in the egg yolk.
- Combine all the remaining ingredients and mix once more.
- Shape the dough into a ball.
- Wrap the ball of dough in plastic wrap.
- Refrigerate the dough for a minimum of thirty minutes or overnight.
- Heat the oven to 180 degrees Celsius.
- Prepare two baking sheets by lining them with parchment paper.
- Cut the dough into two equal portions.
- Return one portion to the refrigerator.
- On a lightly floured surface, roll out the other portion to a thick layer.
- Use the bottom of a glass or a cookie cutter to create cookies about 6cm in diameter.
- Repeat the cutting process until all the dough has been shaped into cookies.
- Bake the cookies for roughly 8-10 minutes.
- Allow the cookies to cool before adding a teaspoon of dulce de leche to half of them.
- Top each filled cookie with the remaining half.
- Coat the edges of each sandwich cookie in coconut flakes.
- Savor the delicious sandwich cookies.
