  1. Begin by beating the softened butter for approximately one minute.
  2. Introduce the sugar and continue to cream the mixture for an additional two minutes.
  3. Add the egg and ensure it is fully combined.
  4. Stir in the egg yolk.
  5. Combine all the remaining ingredients and mix once more.
  6. Shape the dough into a ball.
  7. Wrap the ball of dough in plastic wrap.
  8. Refrigerate the dough for a minimum of thirty minutes or overnight.
  9. Heat the oven to 180 degrees Celsius.
  10. Prepare two baking sheets by lining them with parchment paper.
  11. Cut the dough into two equal portions.
  12. Return one portion to the refrigerator.
  13. On a lightly floured surface, roll out the other portion to a thick layer.
  14. Use the bottom of a glass or a cookie cutter to create cookies about 6cm in diameter.
  15. Repeat the cutting process until all the dough has been shaped into cookies.
  16. Bake the cookies for roughly 8-10 minutes.
  17. Allow the cookies to cool before adding a teaspoon of dulce de leche to half of them.
  18. Top each filled cookie with the remaining half.
  19. Coat the edges of each sandwich cookie in coconut flakes.
  20. Savor the delicious sandwich cookies.
