Instructions

  1. Beat the butter, sugar, and vanilla together until the mixture is pale and airy.
  2. Add the egg yolks and beat them in until fully combined.
  3. Stir in the flour and baking powder, then knead the mixture by hand until a smooth dough forms.
  4. Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes.
  5. While the dough chills, pulse the almonds and sugar in a food processor to your desired texture, from coarse to fine.
  6. Combine the ground almonds and sugar with the butter, egg, and cognac and/or almond extract (if using) to form the almond filling.
  7. Line the cake pan bottom with parchment paper and grease the sides.
  8. Heat the oven to 350°F (175°C).
  9. Take two-thirds of the chilled crust, slice it and press it into the pan so it covers the base and is pushed about 2–3 cm (1 inch) up the sides, smoothing it evenly.
  10. Spoon the almond filling over the crust and spread it into an even layer across the pan.
  11. Roll the remaining dough into a sheet, cut it into long strips and arrange them in a lattice over the filling, pressing any broken bits back together as needed.
  12. Lightly brush the lattice with an egg wash.
  13. Bake for approximately 45 minutes, until the top is golden brown while the almond filling stays soft.
