Mustard champ
Mustard Champ — a traditional Irish side dish.

Ingredients
- 4 g potatoes
- 200 ml milk
- 50 g butter
- 2 tsp mustard
- 50 g spring onion
Instructions
- Cook the potatoes in boiling water for 15 minutes or until they are soft.
- Remove the cooked potatoes from the pot and drain them.
- Mash the potatoes that have been drained.
- Warm the milk and half of the butter in a small section of the pan.
- Incorporate the warmed milk and butter into the mashed potatoes.
- Stir the wholegrain mustard into the potato mixture until well combined.
- Sauté the spring onions in the leftover butter for 2 minutes.
- Make sure the spring onions are tender yet retain a vibrant green color.
- Gently mix the sautéed spring onions into the mashed potatoes.
- Serve the mashed potatoes, which pair perfectly with gammon or as a topping for a fish pie.
