  1. Cook the potatoes in boiling water for 15 minutes or until they are soft.
  2. Remove the cooked potatoes from the pot and drain them.
  3. Mash the potatoes that have been drained.
  4. Warm the milk and half of the butter in a small section of the pan.
  5. Incorporate the warmed milk and butter into the mashed potatoes.
  6. Stir the wholegrain mustard into the potato mixture until well combined.
  7. Sauté the spring onions in the leftover butter for 2 minutes.
  8. Make sure the spring onions are tender yet retain a vibrant green color.
  9. Gently mix the sautéed spring onions into the mashed potatoes.
  10. Serve the mashed potatoes, which pair perfectly with gammon or as a topping for a fish pie.
