  1. Thinly chop a quarter of the chilli.
  2. Place the leftover chilli into a food processor.
  3. In the food processor, include ginger, garlic, coriander stalks, and a third of the coriander leaves.
  4. Blend the ingredients in the food processor until you achieve a coarse paste, adding a little water if necessary.
  5. Heat some oil in a skillet.
  6. Sear the chicken pieces in the skillet for 1 minute.
  7. Incorporate the paste from the food processor and cook for an additional minute.
  8. Introduce peanut butter, stock, and yogurt into the skillet.
  9. Allow the mixture to cook until the sauce is simmering gently.
  10. Let it simmer for 10 minutes until the chicken is cooked through and the sauce has thickened.
  11. Fold in most of the leftover coriander leaves.
  12. Garnish with the remaining coriander leaves on top.
  13. If desired, add the sliced chilli on top.
  14. Serve alongside rice or mashed sweet potato.
