Nutty Chicken Curry
Nutty Chicken Curry — a delightful Indian chicken dish.

Ingredients
- 1 g chilli
- 0.5 g ginger
- 1 pcs garlic
- 1 tsp coriander
- 1 pcs sunflower oil
- 4 g chicken breasts
- 5 tbsp peanut butter
- 150 g chicken stock
- 200 ml greek yogurt
Instructions
- Thinly chop a quarter of the chilli.
- Place the leftover chilli into a food processor.
- In the food processor, include ginger, garlic, coriander stalks, and a third of the coriander leaves.
- Blend the ingredients in the food processor until you achieve a coarse paste, adding a little water if necessary.
- Heat some oil in a skillet.
- Sear the chicken pieces in the skillet for 1 minute.
- Incorporate the paste from the food processor and cook for an additional minute.
- Introduce peanut butter, stock, and yogurt into the skillet.
- Allow the mixture to cook until the sauce is simmering gently.
- Let it simmer for 10 minutes until the chicken is cooked through and the sauce has thickened.
- Fold in most of the leftover coriander leaves.
- Garnish with the remaining coriander leaves on top.
- If desired, add the sliced chilli on top.
- Serve alongside rice or mashed sweet potato.
