Blueberry and Lemon Friands – a delightful Australian dessert recipe.

Ingredients
- 100 g butter
- 125 g icing sugar
- 25 g flour
- 85 pcs almonds
- 3 pcs egg white
- 1 pcs lemon
- 85 g blackberries
Instructions
- Begin by preheating your oven to 180C for fan settings, 200C for conventional, or gas mark 6.
- Thoroughly butter six non-stick friand or muffin molds.
- Melt the butter and allow it to cool down.
- Sift the icing sugar and flour into a mixing bowl.
- Incorporate the almonds into the bowl and mix them using your fingers.
- In a separate bowl, whisk the egg whites until they achieve a light and fluffy foam.
- Create a well in the center of the dry ingredients.
- Pour the egg whites and lemon zest into the well.
- Gently fold in the cooled butter to create a soft batter.
- Using a large serving spoon, distribute the batter evenly among the prepared molds.
- Top each batter-filled mold with a handful of blueberries.
- Bake for 15 to 20 minutes, or until they feel firm to the touch and are golden brown.
- Allow the cakes to cool in the molds for 5 minutes.
- Carefully remove the cakes from the molds and place them on a wire rack to cool completely.
- Before serving, lightly dust the cooled cakes with icing sugar.
