  1. Begin by preheating your oven to 180C for fan settings, 200C for conventional, or gas mark 6.
  2. Thoroughly butter six non-stick friand or muffin molds.
  3. Melt the butter and allow it to cool down.
  4. Sift the icing sugar and flour into a mixing bowl.
  5. Incorporate the almonds into the bowl and mix them using your fingers.
  6. In a separate bowl, whisk the egg whites until they achieve a light and fluffy foam.
  7. Create a well in the center of the dry ingredients.
  8. Pour the egg whites and lemon zest into the well.
  9. Gently fold in the cooled butter to create a soft batter.
  10. Using a large serving spoon, distribute the batter evenly among the prepared molds.
  11. Top each batter-filled mold with a handful of blueberries.
  12. Bake for 15 to 20 minutes, or until they feel firm to the touch and are golden brown.
  13. Allow the cakes to cool in the molds for 5 minutes.
  14. Carefully remove the cakes from the molds and place them on a wire rack to cool completely.
  15. Before serving, lightly dust the cooled cakes with icing sugar.
