  1. Sprinkle 1 tablespoon of curry powder and all-purpose seasoning over the shrimp.
  2. Let the seasoned shrimp rest for approximately 10 minutes.
  3. Dice the onions, peppers, and garlic.
  4. In a large skillet, warm 2 tablespoons of olive oil over medium heat.
  5. Incorporate the sliced yellow onion, red bell pepper, green bell pepper, scotch bonnet pepper (if desired), and minced garlic into the skillet.
  6. Sauté the vegetables for 5 minutes until the peppers begin to soften.
  7. Stir in 1.5 tablespoons of curry powder into the skillet.
  8. Continue stirring for another minute.
  9. Pour the coconut milk into the skillet.
  10. Introduce the seasoned shrimp to the skillet.
  11. Mix in ketchup and thyme to the skillet.
  12. Make sure the shrimp is well coated in the sauce.
  13. Bring the sauce to a gentle simmer.
  14. Keep cooking over medium heat, stirring from time to time.
  15. Turn the shrimp over halfway through the cooking process.
  16. Cook until the shrimp are thoroughly done on both sides, roughly 5-6 minutes.
  17. Adjust the flavor with salt and pepper according to your preference.
