Instructions

  1. Light a hardwood fire in your grill and let it burn down until you have glowing coals — use a combination of wood and charcoal for extra flavor and steady heat.
  2. Just before you start grilling, season the beef generously with salt to help lock in moisture and boost flavor.
  3. Place the beef on the grill, arranging the thickest pieces farther away from the coals.
  4. Begin cooking the beef on the grill, turning it occasionally to promote even doneness.
  5. After the beef has been cooking for a while, add the chorizo and morcilla to the grate.
  6. Continue grilling all the meats, turning them now and then, until they reach your desired level of doneness (ribs can take up to two hours; thinner cuts will cook more quickly).
  7. Remove the meats from the grill and allow them to rest for about 10 minutes before slicing.
  8. Slice the meats and serve with chimichurri and grilled vegetables — optional sides include a fresh tomato salad, crusty bread, and a robust Malbec.
