Potato Salad

  1. Boil 30 small potatoes in water until tender. Drain and let them cool.
  2. Chop a red onion into small squares and place it in a bowl. Add 20ml of white vinegar, a can of sweetcorn, 5g of sugar, a dash of Worcestershire sauce (optional), 1 teaspoon of black pepper, and 0.5 teaspoon of salt. Mix well and let the onions marinate for at least 10 minutes, preferably up to an hour.
  3. Once the onions are ready, add the cooled potatoes to the bowl. Stir in 240ml of mayonnaise and 15g of soft cheese, like Philadelphia. Mix until combined.
  4. Transfer the potato salad to a serving bowl and garnish with chopped chives before serving.
