Potato Salad
Inspired by Helen's potato salad.

Ingredients
- 30 g potatoes
- 1000 ml water
- 1 pcs red onion
- 20 ml white vinegar
- 1 g sweetcorn
- 5 g sugar
- 1 ml worcestershire sauce
- 1 tsp black pepper
- 0.5 tsp salt
- 240 g mayonnaise
- 15 g soft cheese
- 1 tbsp chives
Instructions
- Boil 30 small potatoes in water until tender. Drain and let them cool.
- Chop a red onion into small squares and place it in a bowl. Add 20ml of white vinegar, a can of sweetcorn, 5g of sugar, a dash of Worcestershire sauce (optional), 1 teaspoon of black pepper, and 0.5 teaspoon of salt. Mix well and let the onions marinate for at least 10 minutes, preferably up to an hour.
- Once the onions are ready, add the cooled potatoes to the bowl. Stir in 240ml of mayonnaise and 15g of soft cheese, like Philadelphia. Mix until combined.
- Transfer the potato salad to a serving bowl and garnish with chopped chives before serving.
