Ingredients
- 2 g chicken thighs
- 2.5 g curry powder
- 1 tsp all-purpose seasoning
- 1 g onions
- 3 g spring onion
- 0.5 pcs green pepper
- 4 pcs garlic
- 1 pcs scotch bonnet
- 3 tbsp thyme
- 3 g olive oil
- 0.25 ml water
- 1 pcs russet potato
- 1 g salt
- 1 pcs peppers
Instructions
- In a large mixing bowl, place chicken thighs, all-purpose seasoning, 1 tablespoon of curry powder, onion, green onions, green pepper, garlic cloves, scotch bonnet pepper (if desired), and thyme.
- Mix the ingredients in the bowl thoroughly, making sure each piece of chicken is coated in the seasoning.
- Cover the bowl and let it chill in the refrigerator for a minimum of 1 hour, or up to overnight.
- After the chicken has marinated, take out the onions, peppers, and garlic cloves and set them aside.
- In a large heavy-bottomed pot, warm olive oil over medium heat.
- Add the remaining curry powder to the pot and stir it for about 20-30 seconds.
- Incorporate the reserved onions, green pepper, garlic cloves, thyme, and scotch bonnet pepper (if using) into the pot.
- Cook the mixture in the pot, stirring, until the onions become tender, which should take about 3-5 minutes.
- If the onions and peppers appear too dry, add approximately 1 tablespoon of water.
- Introduce the marinated chicken along with ¼ cup of water into the pot.
- Put a lid on the pot and lower the heat to medium-low.
- Allow the chicken to cook, stirring occasionally, for 30-35 minutes.
- When there are roughly 15 minutes left, mix in the potato.
- Keep cooking with the lid on until the chicken is fully cooked and the potatoes are tender.
- Take the pot off the heat.
- Adjust the seasoning with salt and pepper according to your taste.
