  1. In the mixing bowl of a stand mixer, combine warm water, a generous pinch of sugar, and yeast.
  2. Let the mixture rest until it becomes frothy.
  3. To the same bowl, incorporate 1/2 cup of sugar, warm milk, melted butter, eggs, and salt.
  4. Mix the ingredients together until they are well blended.
  5. Attach the dough hook to the mixer.
  6. While the mixer is running, gradually add the flour until you achieve a smooth yet slightly sticky dough.
  7. Transfer the dough into a bowl.
  8. Cover the bowl with plastic wrap.
  9. Let the dough rise for 1 1/2 hours.
  10. Divide the dough into 12 equal portions.
  11. Shape each piece into long oval forms, approximately 1/4 inch thick.
  12. In a large, deep pot, heat oil to 350 degrees.
  13. Carefully lower the beavertail dough into the heated oil.
  14. Fry each side for 30 to 45 seconds until they turn golden brown.
  15. Place the beavertails on paper towels to drain excess oil.
  16. Add toppings as desired.
  17. Coat in cinnamon sugar, sprinkle with white sugar and a squeeze of lemon, or spread with Nutella and toasted almonds.
