Ingredients
- 1 pcs squash
- 5 g onions
- 1 pcs to taste green chilli
- 1 pcs splash oil
- 1 g turmeric
- 1 pcs bulb garlic
- 7 g sugar
- 0.5 g salt
- 2 ml water
- 4 cup yogurt
Instructions
- Peel the squash and cut it into pieces about 1 cm wide.
- Fill a deep pan with enough oil for frying and heat it until very hot.
- Deep-fry the squash pieces in the hot oil until they are golden, then remove and let them drain.
- Using the same pan and oil, deep-fry the onions until golden, then take them out and set aside.
- Grind the fried onions together with the garlic; if you’re using garlic paste, stir it into the ground onions.
- Wipe the pan if you like, add a small amount of oil, and heat over medium until hot.
- Add the turmeric to the hot oil and stir briefly to release its aroma.
- Dissolve the salt in 1 cup of water, then pour this salted water into the pan with the turmeric.
- Place a layer of the fried squash in the pan, then a layer of the onion-and-garlic mixture; repeat these layers until all the squash and onion mixture are used.
- Add the sugar and another 1 cup of water to the pan.
- Reduce the heat and simmer until the water has reduced to your preferred consistency.
- Spoon 1–2 tablespoons of melted curd onto a plate, arrange the cooked squash on top, and spoon another layer of melted curd over it.
- Garnish with green chili and serve.
