Ingredients
- 4 g macaroni
- 4 cup evaporated milk
- 1 ml water
- 3 g sugar
- 2 g salt
- 4 pcs eggs
- 0.25 g butter
- 1 cup raisins
- 2.5 tsp nutmeg
- 2 tsp vanilla
Instructions
- Place the macaroni in a large pot and add about 4 cups of water to cover; season with salt, bring to a boil, then cook until tender, about 25–30 minutes.
- While the pasta cooks, whisk the eggs and sugar together in a bowl; stir in the vanilla and nutmeg, mix thoroughly, and set aside.
- In a separate medium saucepan heat the evaporated milk, 1 cup water, and butter until it almost reaches a boil; remove from the heat and gradually pour into the egg-sugar mixture while whisking to combine.
- Drain the cooked macaroni, then add the macaroni and the raisins to the milk mixture and stir until evenly incorporated.
- Grease a large baking dish with butter or margarine, transfer the macaroni mixture into the dish, and sprinkle extra nutmeg over the top.
- Bake at 350°F for about 1 hour or until the top is golden and the pudding is set—firm enough to slice but still moist.
