Ingredients
- 50 g butter
- 1 g olive oil
- 1 g onions
- 1 g sugar
- 4 pcs garlic cloves
- 2 g plain flour
- 250 ml dry white wine
- 1 cup beef stock
- 4 g bread
- 140 tbsp gruyère
Instructions
- Gently melt the butter together with the oil in a large, heavy-based saucepan.
- Add the onions, cover the pan, and fry for about 10 minutes until they are soft.
- Sprinkle over the sugar and continue to cook, stirring often, for roughly 20 minutes until the onions are a deep golden brown and caramelised—take care not to burn them.
- Stir in the garlic for the final few minutes of the onions' cooking time.
- Scatter the flour over the onion mixture and stir thoroughly to combine.
- Increase the heat and, stirring constantly, add the wine gradually in a steady stream.
- Pour in the hot stock and stir until everything is well combined.
- Cover the pan and simmer for 15–20 minutes.
- Preheat the grill and toast the bread until golden.
- Spoon the soup into heatproof bowls.
- Top each bowl with a slice or two of toast, pile on the cheese and grill until melted; alternatively, grill the cheesy toasts separately and then place them on top of the soup.
