  1. Prepare all ingredients and tools.
  2. Heat a 20cm non-stick skillet over medium heat.
  3. Break the eggs into a mixing bowl.
  4. Whisk the eggs with a fork until well blended.
  5. Add a piece of butter to the skillet.
  6. Wait for the butter to bubble and sizzle, avoiding browning.
  7. Add Parmesan, salt, and pepper to the eggs for seasoning.
  8. Pour the seasoned eggs into the skillet.
  9. Allow the eggs to bubble gently for a few seconds.
  10. Gently pull the mixture from the edges of the skillet with a wooden fork or spatula.
  11. Bring the egg mixture together in the center.
  12. Let it sit for a few seconds, then stir lightly to mix uncooked eggs with the cooked ones.
  13. Allow it to sit again briefly, then stir more vigorously.
  14. Cease stirring while there are still some slightly uncooked eggs.
  15. Move the skillet back and forth a few times to settle the mixture.
  16. Check that the mixture glides easily in the skillet and appears soft and moist on top.
  17. Give a quick burst of heat to brown the bottom.
  18. Hold the handle and tilt the skillet away from you.
  19. Allow the omelette to slide to the edge of the skillet.
  20. With a fork, fold the side closest to you over by a third.
  21. Continue rolling the omelette to transfer it onto a plate.
  22. Alternatively, you can fold it in half if that is simpler.
  23. Cover the omelette with a piece of kitchen paper and gently puff it up with your fingers.
  24. Glaze the omelette with the remaining piece of butter.
  25. Serve right away.
