Ingredients
- 3 pcs eggs
- 2 g butter
- 1 tsp parmesan
- 3 g tarragon leaves
- 1 g parsley
- 1 tbsp chives
- 4 tbsp gruyère
Instructions
- Prepare all ingredients and tools.
- Heat a 20cm non-stick skillet over medium heat.
- Break the eggs into a mixing bowl.
- Whisk the eggs with a fork until well blended.
- Add a piece of butter to the skillet.
- Wait for the butter to bubble and sizzle, avoiding browning.
- Add Parmesan, salt, and pepper to the eggs for seasoning.
- Pour the seasoned eggs into the skillet.
- Allow the eggs to bubble gently for a few seconds.
- Gently pull the mixture from the edges of the skillet with a wooden fork or spatula.
- Bring the egg mixture together in the center.
- Let it sit for a few seconds, then stir lightly to mix uncooked eggs with the cooked ones.
- Allow it to sit again briefly, then stir more vigorously.
- Cease stirring while there are still some slightly uncooked eggs.
- Move the skillet back and forth a few times to settle the mixture.
- Check that the mixture glides easily in the skillet and appears soft and moist on top.
- Give a quick burst of heat to brown the bottom.
- Hold the handle and tilt the skillet away from you.
- Allow the omelette to slide to the edge of the skillet.
- With a fork, fold the side closest to you over by a third.
- Continue rolling the omelette to transfer it onto a plate.
- Alternatively, you can fold it in half if that is simpler.
- Cover the omelette with a piece of kitchen paper and gently puff it up with your fingers.
- Glaze the omelette with the remaining piece of butter.
- Serve right away.
