  1. Preheat the oven to 230C/fan 210C/gas 8.
  2. Lightly coat the bases of two 4-hole Yorkshire pudding trays or two 12-hole non-stick muffin trays with sunflower oil.
  3. Put the trays in the oven to warm up.
  4. Add 140g of plain flour to a mixing bowl.
  5. Incorporate 4 eggs, mixing until the mixture is smooth.
  6. Slowly pour in 200ml of milk while continuing to mix.
  7. Make sure the batter is completely free of lumps.
  8. Season the batter with a pinch of salt and pepper.
  9. Transfer the batter into a jug.
  10. Take the hot trays out of the oven.
  11. Carefully and evenly distribute the batter into the compartments of the trays.
  12. Return the trays to the oven.
  13. Allow the trays to remain undisturbed for 20-25 minutes, or until the puddings rise and turn golden.
  14. Serve right away.
  15. If desired, let the puddings cool and freeze them for up to 1 month.
