  1. Clean and peel the potatoes.
  2. Chop the potatoes into evenly sized chunks.
  3. In a large pot, bring salted water, potatoes, and bay leaves to a boil for 20 minutes.
  4. Remove and discard the bay leaves.
  5. If using whole curly kale, rinse the bunches thoroughly under cool running water.
  6. Eliminate any tough stems and throw away any discolored leaves from the kale.
  7. Slice the curly kale into thin strips using a sharp knife.
  8. Peel and dice the shallots.
  9. In a frying pan or skillet, heat 1 tablespoon of butter.
  10. Cook the shallots for a few minutes until softened.
  11. Incorporate the curly kale and 2 tablespoons of water into the skillet.
  12. Season the mixture of kale and shallots.
  13. Cook for approximately 10 minutes, or until the kale becomes tender.
  14. Heat the milk either on the stove or in the microwave until warm.
  15. Drain the potatoes and let them sit to remove excess water.
  16. Use kitchen towels to dry the potatoes.
  17. Mash the potatoes using a potato masher or ricer.
  18. Quickly incorporate the warm milk and any remaining butter into the mashed potatoes.
  19. Season the mashed potatoes with nutmeg, salt, and pepper to your liking.
  20. Fold the cooked curly kale into the mashed potato blend.
  21. Garnish the mixture with slices of smoked sausage.
  22. Serve hot alongside your preferred mustard or gravy.
