  1. Place the rice noodles in water and let them soak overnight until they become tender.
  2. Cook the rice noodles in boiling water for about 10 to 15 minutes.
  3. Drain the noodles and rinse them with cold water to halt the cooking process.
  4. In a mixing bowl, combine the shrimp, an egg, a pinch of white pepper, sesame seed oil, corn starch, and oil.
  5. Thoroughly combine the shrimp mixture until well blended.
  6. Heat 2 tablespoons of oil in a wok.
  7. Add the seasoned shrimp to the wok and stir-fry until they turn golden brown.
  8. Remove the cooked shrimp from the wok and set them aside.
  9. Pour 1 tablespoon of oil into the wok.
  10. Add minced garlic, ginger, and all the vegetables to the wok.
  11. Incorporate the soaked and rinsed noodles into the wok.
  12. Pour in sherry cooking wine, oyster sauce, sugar, vinegar, sesame seed oil, a pinch of white pepper, and soy sauce into the wok.
  13. Return the cooked shrimp to the wok.
  14. In a separate bowl, whisk together 1 tablespoon of corn starch with 2 tablespoons of water.
  15. Gradually pour the corn starch mixture into the stir-fry until the sauce achieves your preferred consistency.
