  1. Pour 1 tablespoon of oil into a wok and heat it over high flame.
  2. Cook the pork in several batches until it is browned on all sides.
  3. Using a slotted spoon, take the pork out and place it aside.
  4. Reduce the heat and add the remaining oil into the wok.
  5. Mix in the shallots, ginger, and chili.
  6. Sauté over low heat for a few minutes until they begin to soften.
  7. Incorporate sugar, fish sauce, and 200ml of water into the pan.
  8. Combine all the ingredients well.
  9. Increase the heat until it reaches a boil, stirring to ensure the sugar dissolves.
  10. Add the pork back into the pan.
  11. Let it simmer vigorously for 8-10 minutes until the sauce becomes thicker.
  12. Sample the sauce and mix in additional fish sauce if necessary.
  13. Stir in the chili sauce to the blend.
  14. Garnish with chopped spring onions.
  15. Accompany the dish with steamed rice and pak choi.
