Vietnamese-style caramel pork

Ingredients
- 1 tbsp nut oil
- 500 g pork shoulder steaks
- 2 pcs shallots
- 1 g ginger
- 1 g chilli
- 75 g brown sugar
- 1 ml fish sauce
- 2 tsp chilli sauce
- 4 g spring onion
- 1 g rice
- 1 g pak choi
Instructions
- Pour 1 tablespoon of oil into a wok and heat it over high flame.
- Cook the pork in several batches until it is browned on all sides.
- Using a slotted spoon, take the pork out and place it aside.
- Reduce the heat and add the remaining oil into the wok.
- Mix in the shallots, ginger, and chili.
- Sauté over low heat for a few minutes until they begin to soften.
- Incorporate sugar, fish sauce, and 200ml of water into the pan.
- Combine all the ingredients well.
- Increase the heat until it reaches a boil, stirring to ensure the sugar dissolves.
- Add the pork back into the pan.
- Let it simmer vigorously for 8-10 minutes until the sauce becomes thicker.
- Sample the sauce and mix in additional fish sauce if necessary.
- Stir in the chili sauce to the blend.
- Garnish with chopped spring onions.
- Accompany the dish with steamed rice and pak choi.
