Anzac biscuits
Anzac biscuits — a delightful Australian treat.

Ingredients
- 85 g porridge oats
- 85 cup coconut
- 100 g plain flour
- 100 g caster sugar
- 100 g butter
- 1 pcs golden syrup
- 1 g bicarbonate of soda
Instructions
- Preheat the oven to 180C, or 160C for fan ovens, or gas mark 4.
- Combine the oats, coconut, flour, and sugar in a mixing bowl.
- In a small saucepan, melt the butter.
- Mix the golden syrup into the melted butter.
- Dissolve the bicarbonate of soda in 2 tablespoons of boiling water.
- Add the bicarbonate of soda solution to the mixture of golden syrup and butter.
- Create a small well in the center of the dry ingredients.
- Pour the butter and golden syrup mixture into the well you made.
- Gently mix to combine the wet and dry ingredients.
- Spoon the mixture onto greased baking sheets, spacing them about 2.5cm/1in apart.
- Bake in batches for 8 to 10 minutes, or until they turn golden.
- Move the baked cookies to a wire rack to allow them to cool.
