  1. Preheat the oven to 180C, or 160C for fan ovens, or gas mark 4.
  2. Combine the oats, coconut, flour, and sugar in a mixing bowl.
  3. In a small saucepan, melt the butter.
  4. Mix the golden syrup into the melted butter.
  5. Dissolve the bicarbonate of soda in 2 tablespoons of boiling water.
  6. Add the bicarbonate of soda solution to the mixture of golden syrup and butter.
  7. Create a small well in the center of the dry ingredients.
  8. Pour the butter and golden syrup mixture into the well you made.
  9. Gently mix to combine the wet and dry ingredients.
  10. Spoon the mixture onto greased baking sheets, spacing them about 2.5cm/1in apart.
  11. Bake in batches for 8 to 10 minutes, or until they turn golden.
  12. Move the baked cookies to a wire rack to allow them to cool.
